I use a Shure SM57 on both the top & bottom of the snare. Works for me.

That Yamaha kit is beautiful! I'm a big fan of Yamaha drums - I think they sound great and they are always well built.
My two kits are the vintage style shells with full round over bearing edges. I think those type of shells sound better with coated heads. To my ears they sound warmer. Less attack, less plastic sound...
