Being a joey jordison fan- the song "Welcome" on the Vol. 3 (The Subliminal Verses) album absolutely blows me away. It's so difficult... I get mad at myself because i cannot (and probably wont ever) know how to play that song.
For a nonbiased opinion i would say probably either Dave Lombardo's drumming in "World Painted Blood" or Roy Mayorga's drumming in "Mission Statement" are my two personal/other favorites. To drum to and to listen to.

I can play most of it. I can play the intro w/o the kick, and most of the breakdowns without all those crazy fills Matt puts in there. And I suck at the offbeat china thing.

hmm, i would probably throw something a little interesting out there like the opening of 3 libras by a perfect circle, just a really cool groove without any over playing of the song.
just my style of playing though, simple but emotional ripping.
And yes I think josh freese is a a genious.
