I think any of the three would be a good choice. If it were me though, i'd go with the Cats. Ddrum has stepped their game up as far as quality control goes, and they make a nice kit now. Welcome to the forum also!

Welcome to DC choose what is the sound and looks that you want. Once bought you have to live with it.
I think it's a tough call between the Cats and Luddies. Similar configurations. You'll get Lacquer in the Luddies if that matters to you.
Best bet is to go play them and see which moves you more. That's the kit to get.
