My opinion is that you can't go wrong with a Gretsch Catalina Maple. Great kit at an affordable price. Be sure to get a kit that YOU like the sound of. This is just my opinion, and I think any of the brands you listed all have their attributes.
Unfortunatly i had to sell my old yamaha so now about 6 months later i am gonna be saving for new kit, im gonna have about £750 so about $1200, i have been lookin at the catalina birch or maple, catalina club mod, yamaha stage custom, pdp m5 or x7, ddrum ash pocket, i like those kits but really dont know which is best im looking for that gospel funky sound warm and punchy, the config i want is 20" - 22" bass, 8" 10" rack toms, 14" 16" floor toms, PLEASE HELP i have no idea, i was lucky to get my old kit as it was my friends, so i have no experience of buying a kit or knowin what to look for NOOB BUYER HAHA

Pearl Vision VMX or Pearl MCX ( masters customs) are great kits ( maple) depending on the sound and price you want to pay.
I'd go with the X7. Lots of toms, warm/punchy. As far as I know, gospel drummers love it.

I'd say the X7 as well, but that is because I have owned two Pacific kits in the past. I love how well they sound tuned up with a good set of heads. You can make them sing just like a nice set of DW's in my opinion, although they will not be quite as punchy on the bottom end.
Go for another Absolute! X7's are a good deal for the money drumset but can't compare even remotely to the build quality of an Absolute. It will take awhile to find the deal, but it is out there for you. You might end up disappointed settling for less.

Used Recording Customs for Birch or the Stage Customs if your budget calls for less spending. Not a big fan of pdp or ddrum but if you like them go for it.

When you ask about buying a drum kit, you're pretty well always going to get a ton of suggestions, each respondant pitching a brand familiar to them.
Buying a drum set is no different than buying anything else. Like buying a car or a house or even a pair of shoes for that matter. You decide what your needs are and what you are able to spend. Look at a bunch and then buy one!
