+1 as well, although you might want to give Vintage Ambassadors a try as well. They are a two ply coated with one 7.5 mil ply and one 3 mil ply.

Try coated single ply w/ no dampening for batter, and the same for resonant head on toms and kick.

Fiber-skyns for sure! Nobody else makes them but Remo. They got that real old time jazzy sound that you get from animal skins (avoid at all costs because of humidty issues). They also have what I refer to as a "buttery" feel to play on with the sticks. Stellar for brush work as well.
