what gives a deeper sound a 1 or 2 ply head on the bass drum?

I would say more often than not a 2 ply but rememember that it's relative to so many other factors: size of bass drum, tuning, thickness of shells, quality of wood, reso heads, holes in the front head, hole size, muffling, kick pads, room acoustics, mic'ing, etc.

I am using the EMAD system by Evans (batter and reso) with nothing inside the drum at all. On a 22x18 bass drum it is thunderous...in a good way.

The depth of the bass drum will do more for the depth of sound than the head. The head will give you more of resonance desired. A single ply head will resound and often times need quite a bit of muffling to control it. A double ply head will give you more punch and power to accomodate the depth of the drum itself and, often times, is made with an internal muffler. I think.
