I like both wood and metal. My Yamaha absolute maple snare sounds great and so does my Pearl Ian Paice sig metal snare. Different sounds for different situations.

I definetly prefer a wood snare! I have a Pearl ELX custom wood snare and a Ludwig Acrolite aluminum snare. The Pearl has a great "crack" to it while the Ludwig is just a little too high pitched and snappy for my taste.
As far as putting the batter head on the snare side, I asked myself the same question a few months ago and decided to try it. It did'nt sound bad, but it dropped the tone and muffled the snare wires so much that you could'nt here it over the bass and any overtone the snare had with the wires dropped was lost. Some people might like it. I did'nt. Give it a try though, it won't hurt anything, just take a little of your time to swap the heads out.

I have a Wood Ludwig Snare Drum that came with my Set,And I also have a Pearl 3X13 Maple Piccolo.
definitely maple shells (or wood, at least)...to my ear, metal-shelled snare drums are a bit harsh, and too ringy...no warmth.
Word to the wise : don't mess with the drummer.

steel snares are alright. i have a steel piccolo snare that i use. i just drop the wires and use it as a high tom.

I think wood snares have just a more natural sound, I totally prefer wood.
As far as putting a batter head on the bottom, you will I am assuming get a horrible sound from your snares, the bottom head is supposed to be super thin, so you get lots of snare action and response, putting a batter head will kill all that, I would not recommend it.
